      Baked Chicken with Parmesan Crust

      Serves 4


      2 tablespoons Dijon mustard

      1/2 teaspoon thyme, chopped

      1/4 teaspoon cayenne pepper

      4 boneless skinless chicken breast halves

      3/4 cup Parmesan cheese, grated

      3/4 cup breadcrumb

      salt to taste

      Method of Preparation:

      1.Preheat oven to 450 degrees F.

      2.Mix mustard, thyme, cayenne, and salt. Add chicken breasts and coat completely.

      3.In a separate bowl, combine Parmesan and breadcrumbs. Dredge chicken in mixture.

      4.Put chicken on a rack set over a baking sheet. Spray with cooking spray and place in middle of oven. Bake until golden brown, about 15 minutes. Let rest 5 minutes before serving.
