      Bechamel Butter Sauce

      Serves 6

      Ingredients:

      4 tablespoons clarified butter

      4 tablespoons flour

      2 cups cold milk

      1 teaspoon sugar

      1/2 teaspoon salt

      1/8 teaspoon white pepper

      pinch of nutmeg

      Method of Preparation:

      1. Melt the butter in a heavy skillet over low heat, and stir in the flour. Stir constantly for 3 minutes, thus cooking the flour and eliminating a pasty taste. Do not let flour brown. Add the remaining ingredients slowly, stirring constantly until sauce thickens.
