Cheddar Cheese Sauce
3 tablespoons clarified butter
3 tablespoons flour
1 1/2 cups milk
2 teaspoons Worcestershire sauce
1 teaspoon mustard powder
1/2 teaspoon salt
1/8 teaspoon ground white pepper
1 cup sharp Cheddar, grated
Method of Preparation:
1.Melt butter and stir in flour, cooking for 3 minutes . Gradually add milk, stirring until well mixed. Cook over low heat, stirring constantly, until thickened and smooth.
2.Add Worcestershire sauce, mustard powder, salt, and white pepper. Cook for 5 minutes longer.
3.Remove from heat, add cheese. Stir until smooth and well blended.
