Gluten Free Dinner Rolls

Makes 20 rolls


2 tablespoons dry active yeast

2 teaspoons sugar

2 cups warm water

1 1/2 cups white rice flour

1 cup potato starch

1/4 cup sorghum flour

3 teaspoons xantham gum

1 1/2 teaspoons salt

1 tablespoon baking powder

2 eggs

1/4 cup vegetable oil

1/4 cup honey

1 teaspoon apple cider vinegar

1 egg, beaten

1 teaspoon water

Method of Preparation:

1.Combine yeast, sugar, and water in a small bowl. Whisk to dissolve sugar. Let sit for 8 minutes or until the mixture is bubbling.

2.Combine flours, starch, xantham gum, salt, and baking powder in a mixer. Mix for 30 seconds to combine. Add yeast mixture, 2 eggs, oil, honey, and vinegar. Mix on low until combined. Scrape down sides of bowl, then turn mixer on high for 3 minutes.

3.Brush 2 muffin pans with oil. Preheat oven to 375 degrees F.

4.Spoon batter into prepared muffin tins, filling about 3/4 full. Cover loosely with plaastic wrap. Allow to sit in a warm area for 35 minutes, or until the dough has almost doubled in size.

5.Brush the tops of each roll with 1 beaten egg mixed with 1 teaspoon water. Bake for 18-20 minutes or until golden brown. Let cool in pans for 10 minutes.
