      Greek Salsa

      Serves 8

      Ingredients:

      1/2 cup feta cheese, crumbled

      1/2 cup kalamata olives, halved

      1/4 cup red onion, diced

      1/2 cup cucumber, diced

      1/2 cup roasted red peppers, chopped

      2 tablespoons mint, minced

      1/2 cup olive oil

      1/4 cup red wine vinegar

      1 teaspoon dried oregano

      pita chips

      Method of Preparation:

      1.In a large bowl, combine feta, olives, red onion, cucumber, and red peppers.

      2.In a separate bowl, combine mint, oil, vinegar, and oregano. Pour over vegetable mixture. Allow to sit for 1 hour before serving with pita chips.
