Grilled Mahi Mahi

Serves 4


4 6-ounce mahi mahi fillets

Juice of 2 limes

1 tsp. lime zest

3 Tbsp. soy sauce

2 Tbsp. minced ginger

2 Tbsp. sesame oil

1 Tbsp. chopped fresh cilantro

salt and black pepper to taste

Method of Preparation:

1. Combine all ingredients (except the fish) in a resealable plastic bag. Add mahi mahi fillets. Turn to coat. Place in refrigerator for 20 minutes.

2. Preheat grill to high and thoroughly clean the cooking grate. Remove fillets from marinade and set the marinade aside. Place fish fillets on grill. Grill for about 6 minutes or until the sides begin to turn opaque. Flip and pour a little of the reserved marinade on the cooked side. Continue to grill for an additional 6 minutes or until the fish flakes easily through the middle.

3. Remove from the grill and serve immediately.
