      Grilled Orange Salmon

      Serves 4

      Ingredients:

      1/2 cup orange juice

      1 Tbsp. minced fresh tarragon

      2 Tbsp. olive oil

      1 1/2 tsp. minced chives

      1/2 tsp. grated orange peel

      1 garlic clove, minced

      1/4 tsp. salt

      1/8 tsp. pepper

      4 salmon fillets (8 ounces each)

      Method of Preparation:

      1. In a large bowl, combine the first eight ingredients. Set aside 2 tablespoons marinade for basting. Pour remaining marinade into a resealable plastic bag; add salmon. Seal bag and turn to coat; refrigerate for 2-3 hours.

      2. Drain and discard marinade. Grill salmon, uncovered, over medium heat or broil 6 in. from the heat for 12-15 minutes or until fish flakes easily with a fork. Baste occasionally with reserved marinade.
