2 cans garbanzo beans, thoroughly rinsed2 heads radicchio
For the dressing:
1/4 cup extra virgin olive oil2 tablespoons parsley, minced2 tablespoons lemon juice2 tablespoons chive, minced1 clove garlic, minced2 tablespoons tahinisalt and pepper as needed
Method of Preparation:
1. For the dressing: combine all ingredients in a food processors. Pulse until smooth.2. Mix dressing with beans. Serve over radicchio.
