Layered Beef Dinner

Serves 4


2 cups potato, sliced

1 1/2 cups celery, chopped

1 pound lean ground beef

1 cup onion, sliced

1 cup bell pepper, sliced

1 14.5-ounce can diced tomatoes

1 tablespoon extra virgin olive oil

1 teaspoons salt

1/4 teaspoon ground black pepper

Method of Preparation:

1.Grease an 8x12-inch baking dish. Layer all ingredients, seasoning after each addition. Top with olive oil. Cover with foil and bake in a 350 degrees preheated oven for 1 1/2 hours.
