Lean Green Lettuce Tacos

Serves 4


1 tablespoon extra virgin olive oil

1 red onion, minced

1 zucchini, diced

1 yellow squash, diced

1/2 pound lean ground beef

1 1.25-ounce taco seasoning

1 8-ounce can no sodium added diced tomatoes

1 tablespoon lime juice

8 Boston lettuce leaves

2 tablespoons cilantro, chopped

1/4 cup queso fresco, crumbled

Method of Preparation:

1.Heat a large skillet over medium heat. Add olive oil, then onion, zucchini, squash, and ground beef. Cook for 6 minutes or until beef is cooked through.

2.Add seasoning and diced tomatoes, cook for an additional 5 minutes. Remove from heat and add lime juice.

3.Serve meat in romaine lettuce topped with cilantro and queso fresco.
