Lemon Pound Cake

Makes 1 loaf

Ingredients:

1 cup white rice flour

1/4 cup tapioca starch

1/4 cup potato starch

1 tablespoon baking powder

1/4 teaspoon salt

1/2 cup butter

1 cup sugar

2 eggs

1/2 teaspoon vanilla extract

1 tablespoon lemon zest

2 tablespoons lemon juice

1/2 cup milk

Method of Preparation:

1.Preheat oven to 35 degrees F.

2.Sift together rice flour, tapioca, potato starch, baking powder, and salt.

3.In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time. Add zest, lemon juice, vanilla extract, and milk. Add dry ingredients, mix to combine.

4.Fill a buttered loaf pan and bake for 20-25 minutes.
