      Mango Chow Salad

      Chef Antonilia Anthony, Trinidad and Tobago

      Ingredients:

      3 mangoes, ripened, sliced half

      1 tsp. Sugar

      Salt to taste

      Black pepper to taste

      1 tbsp. freshly squeezed orange juice

      1 tbsp. Pepper sauce

      1 tsp. Minced garlic

      1/2 tsp. Minced onion

      1 tsp. Minced cilantro

      Method of Preparation:

      1.Gently massage sugar, minced garlic, minced onion, and minced cilantro onto sliced half ripped mangoes.

      2.Mix in the hot pepper sauce and orange juice. Season with salt and black pepper to taste.
