      Marinated Mushroom Salad

      Marinated Mushroom Salad

      Serves 8

      Ingredients:

      2 pounds crimini mushrooms, thinly sliced

      1 red bell pepper, diced

      1 head romaine lettuce, chopped

      1 cup snow peas, julienne

      1/2 cup extra virgin olive oil

      2 tablespoons white vinegar

      2 tablespoons lemon juice

      1 tablespoon sugar

      2 tablespoons basil, chopped

      1 tablespoons oregano, chopped

      1 tablespoon marjoram, chopped

      salt and freshly ground black pepper to taste

      Method of Preparation:

      1.Combine mushrooms, peppers, lettuce, and snow peas in a mixing bowl.

      2.In a separate bowl, vigorously mix oil with vinegar, sugar, basil, oregano, marjoram, salt, and pepper to create the dressing. Add 3/4 of dressing to vegetable mixture.

      3.Serve with remaining dressing on the side.
