Mascarpone Vanilla Honey Parfait

Mascarpone, Vanilla and Honey Parfait Serves 4 2 Pears peeled and sliced into 1/4" pieces 2 black plums's sliced into 1/4" pieces 1 cup blueberries 1 large mango sliced into 1/4" pieces 1 tbsp. coconut rum 1 cup mascarpone cheese 3 tbsp. honey 1 tsp. vanilla extract Seeds from 1 vanilla bean 3 tbsp. heavy cream. Method of preparation: 1.{}{}{} Place all of the fruits in a bowl and drizzle the coconut rum over and toss well and chill. 2.{}{}{} In a bowl, combine the mascarpone cheese, honey and vanilla extract and beat well. Add the vanilla seeds and heavy cream and mix well. If the mixture is too thick just adjust its consistency with more cream. 3.{}{}{} At service, place a layer of fruit in a nice serving container, then add a little of the mascarpone cream and top with more fruit and finish with the mascarpone cream. Serve at once.
