Not Your Average Tuna Melt

Serves 4


2 cups extra virgin olive oil

2 6-ounce cans albacore tuna

1/4 cup red onion, diced

1 tablespoon balsamic vinegar

1 tablespoon basil, minced

1/2 teaspoon crushed red pepper

1 loaf foccaccia, quartered

8 slices cheddar cheese

salt and pepper to taste

Method of Preparation:

1.In a large saucepan, heat olive oil and tuna over medium heat. Once oil is hot, lower heat and cook for 8 minutes until tuna is cooked through. Allow to cool in oil. Remove fish from oil and flake with a fork. Season with salt and pepper.

2.Add red onion, balsamic, basil, and crushed red pepper. Spoon mixture onto foccaccia. Top with cheddar cheese.

3.Add the sandwiches to the press and cook over moderate heat until the cheese is melted, about 6 minutes. Cut the sandwiches in half and serve.
