      Nut Crusted Maple Dijon Salmon

      Number of Servings: 4


      4 each Salmon, fillet

      3/4 cup Oil

      3 tablespoons Mustard, dijon

      2 tablespoons Honey

      2 each Lemon, juiced

      2 tablespoons Rice wine mirin

      1 teaspoon Paprika

      1 teaspoon Cayenne

      1 teaspoon Garlic, minced

      2 teaspoons Pepper, ground

      1/2 cup Corn starch

      1/4 cup White wine

      1 1/2 cups Pecans, or any variety of nut

      1/2 stick Butter

      1/4 cup Maple syrup

      1/4cup Brown sugar

      1 1/2 tablespoons Molasses

      1 teaspoon Salt

      Method of Preparation:

      1. Gather all ingredients and equipment.

      2. In a bowl mix together oil, mustard, honey, lemon, mirin, paprika, cayenne, garlic, and black pepper. Mix well

      3. Add salmon, coating all fillets completely

      4. In another bowl add cornstarch and dredge salmon; coating fillets on all sides.

      5. Sear salmon on all sides for a total of around six minutes until reaching a nice golden color. Deglaze by adding wine, cook for 30 seconds and then remove from heat.

      6. In saut pan, melt butter and add pecans, maple syrup, brown sugar, molasses, and salt.

      7. Cook for around 5-6 minutes until sugars are caramelized.

      8. Top Nut mixture on top of cooked salmon fillets, and bake for around 6-8 minutes or until fully cooked.
