      Olive Oil Cake with Limoncello

      Serves 8

      Ingredients:

      3/4 cup extra virgin olive oil

      3 cups flour

      4 eggs

      1 cup sugar

      2/3 cup whole milk

      4 tablespoons limoncello

      1 tablespoon baking powder

      1/2 cup powdered sugar

      Method of Preparation:

      1.Preheat oven to 400 degrees F. Using 2 tablespoons olive oil, grease a 9-inch metal cakepan or cast iron skillet.

      2. Combine eggs and sugar in a mixing bowl and whisk for about a minute. Add the olive oil and incorporate with whisk. Add flour,

      baking powder, and limoncello and incorporate thoroughly with a rubber spatula until the consistency is smooth. Add mixture to cakepan or cast iron skillet until roughly 2/3 full.

      3.Decrease oven temperature to 325 degrees F and immediately place cake in oven, cooking for 20-40 minutes. Remove from cake pan or iron skillet and set on a wire rack. If desired, poke holes in cake with a toothpick once cooled. Cover cake with 1/4 cup limoncello and let sit for 20 minutes.
