      Olive Oil Poached Tuna

      Serves 4

      Ingredients:

      4 cups extra virgin olive oil

      4 6-ounce tuna steaks, 2 inches thick

      2 chili peppers

      2 cloves garlic

      1 teaspoon whole peppercorns

      2 sprigs thyme

      2 bay leaves

      Method of Preparation:

      1. Rinse tuna steaks and pat dry. In a brazier, heat enough oil to completely cover the steaks. Add all of the ingredients except for the

      fish. Bring the oil to a simmer and let it heat the aromatics until the aroma is strong. Lay in the steaks and bring the oil back to a very

      slow simmer. Transfer the pan to an oven and roast uncovered at 180 degrees F for 15 to 20 minutes. Cooking time will vary depending on thickness

      of the marlin steak so be sure to check half way through.
