Gluten Free: Raspberry Crumble Bars

Raspberry Crumble Bars

Serves 12


2 sticks butter, softened

1 cup oat flour

1 cup sorghum flour

1/2 cup brown rice flour

1 teaspoon xantham gum

1 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon ground cinnamon

1 1/4 cup light brown sugar

1 egg, beaten

1 teaspoon vanilla extract

2 cups old fashioned rolled oats

3/4 cup walnuts, chopped

2 cups raspberry jam

Method of Preparation:

1.Preheat oven to 375 degrees F.

2.Butter a 9 x 13 inch baking pan, and line with parchment, letting 2 ends overhand edges. Butter parchment.

3.Combine flours, xantham gum, baking soda, salt, and cinnamon. Add brown sugar and butter, combine well. Add egg and vanilla, then oats and walnuts.

4.Press half of the dough into pan. Top with raspberry jam, then crumble remaining dough on top of jam.

5.Bake until golden and cooked through, about 40 minutes. Let cool for 15 minutes before removing from pan.
