Rice Pudding

1 cup long grain rice

1 quart water

1 cup sugar

2 quarts whole milk

1/2 teaspoon salt

1/3 cup sugar

4 egg yolks

1 tablespoon vanilla

Method of Preparation:

1.Bring rice and water to a boil in a large saucepan, reduce to a simmer and cook until the water has reduced by 90%. Add 1 cup sugar, milk, and salt. Continue to simmer and stir occasionally until the rice mixture starts to thicken.

2.Separately combine the remaining ingredients. Gradually add some of the hot liquid to temper the eggs. While whisking, add the egg mixture to the rice pudding.

3.Cook until rice is tender, about 1 hour in total. Pour into ramekins and top with fresh fruit and cinnamon.
