      Sunday Brunch: Blueberry Cheese Danish

      Blueberry Cheese Danish


      Makes 8

      1/2 cup sugar

      8 ounces of cream cheese softened

      1 tbsp lemon juice

      1 tsp vanilla extract

      1 cup of either fresh or frozen blueberry's

      1/2 cup blueberry preserves

      1 package of frozen puff pastry thawed

      1 egg

      1 tbsp. water

      2 tbsp. sanding sugar{} ( optional)


      Method of preparation:

      1. Preheat an oven to 400 degrees.
      2. In a bowl, beat the sugar and cream cheese until smooth. Add the lemon juice and vanilla and set aside.
      3. In another bowl, combine the blueberry's and preserves and mix well.
      4. Open the pastry sheets and cut in half then cut again to make 4 equal rectangle pieces and lay them 4 at a time on a sheet pan spacing them out.
      5. Using a fork, gently prick the pastry sheets a few times keeping away from the edges.
      6. Beat the egg and water together and brush the tops of the pastry sheets.
      7. Next add a tbsp. of the cheese in the center of each pastry sheet. Then top with a tbsp. of the blueberry mixture gently pressing it onto the cheese,
      8. If you use sanding sugar sprinkle it on the edges of the pastry and bake in the oven for 18 min until brown and puffy on the edges.
      9. Cool a bit before eating.
