      Sunday Brunch: Breakfast Calzone

      Breakfast Calzone Makes 6-8 1 pound of pizza dough 3 eggs 1/4 cup milk 1 tbsp. olive oil Pinch of salt and pepper 2 large rounds of fresh mozzarella cheese sliced thinly 1/4 pound of sliced pepperoni 1/4 cup of grated parmesan cheese 1 egg and 1 tbsp. water for an egg wash. Method of preparation; 1.{}{}{}{}{} Divide the pound of dough into 6-8 small pieces and shape into round balls. Place on a lightly sprayed sheet pan covered to double in size. 2.{}{}{}{}{} Meanwhile, heat the oil in a non stick skillet until hot, 3.{}{}{}{}{} Beat the three eggs and milk together with a little salt and pepper and make a scrambled type egg but leave it a little undercooked. 4.{}{}{}{}{} Set aside to cool. 5.{}{}{}{}{} Using a rolling pin, roll out the dough into a 4" round on a floured surface so it doesn't stick. 6.{}{}{}{}{} Place a some of the mozzarella cheese, then add{} a few slices of the pepperoni then the egg and a sprinkling of the parmesan cheese. 7.{}{}{}{}{} Lightly using the egg wash brush it on one half of the circle of dough. 8.{}{}{}{}{} Roll over the edge of the dough to make it look like a turnover, press the edges to seal and fold the seal under the dough. 9.{}{}{}{}{} When all are done, place on a lightly oiled sheet pan, brush the egg wash and poke a few holes using a fork. Bake in a 4oo degree oven{} for 15-18 min until golden brown.
