      Sunday Brunch: Broccoli Chorizo Tortilla

      Tortilla with Chorizo, Broccoli and Onion

      Serves 4


      8 large eggs

      Salt and pepper

      4 tbsp olive oil

      3 tbsp cold water

      1/2{}pound Chorizo Sausage casing removed and chopped fine

      1 medium onion chopped fine

      1 bunch of broccoli, trimmed and lightly cooked

      Grated cheese optional



      Method of Preparation:


      1. Crack the eggs in a bowl, add 2 tbsp of olive oil, salt and pepper and whisk until well blended. Add 3 tbsp of cold water and mix in.
      2. Heat a non stick skillet to hot, add the remaining 2 tbsp of oil and add the sausage and onion and saut until the onion is translucent.
      3. Add the broccoli and cook for 2 min.
      4. Gently pour the egg mixture on top. Swirl the pan to full in all the openings and let cook for 34-40 seconds.
      5. Keep moving the tortilla away from the sides of the pan until all the egg liquid is cooked. Slip it onto a warm platter and sprinkle with grated cheese is desired. Serve.
