Sunday Brunch: Caramelized Onion Apple Cheese Tart

Caramelized Onion Apple and Gruyere Cheese. Makes about 12 2 tbsp. olive oil 2 large onions sliced thin 1/2 tsp. salt 2 large granny smith apples, peeled and halved and sliced thin 3/4 cup shredded gruyere cheese 2 tbsp. chopped scallions 1 tsp. fresh thyme chopped 1/4 tsp. course grind black pepper 1 package of frozen puff pastry thawed 1 egg beaten with a little water Method of preparation; 1.{}{}{}{}{} In a large skillet, heat the oil until barely hot. Add the onions and slowly cook stirring a few times to get lightly brown. This should take about 20-25 min. Do not let get crisp. 2.{}{}{}{}{} Transfer the onions to a bowl to cool. 3.{}{}{}{}{} Meanwhile lay the puff pastry on a flat surface and cut into 2x2 squares and place on a lightly sprayed sheet pan. 4.{}{}{}{}{} Mix the egg and water together to make an egg wash and beat until smooth. Brush the tops of the pastry with this mixture. 5.{}{}{}{}{} To the onions, add the apples, scallions, thyme, and pepper. 6.{}{}{}{}{} Place a tbsp.. of this mixture on top of the pastry and bake in a 400 degree preheated oven for 15 min .Let cool a bit and enjoy.
