      Chocolate Chip Macaroons (Gluten Free)

      3 large eggs

      1 cup sugar

      1 tsp vanilla extract

      16 ounces unsweetened coconut flakes

      1/2 cup chocolate chips

      Method of preparation:

      1.{}{}{}{} Beat the eggs, sugar and vanilla in a bowl until smooth, about 1 min.

      2.{}{}{}{} Add the coconut and chocolate and mix well and let sit for 30 min.

      3.{}{}{}{} Preheat an oven to 325 degrees, then mix the coconut mixture once more.

      4.{}{}{}{} Line a baking sheet with parchment paper or a silt pat, make table spoon mounds on the sheet. Place in the oven for 12-15 min, shut off the oven and let the cookies stay for 15 min more. Remove and place on a plate to cool.
