      Sunday Brunch: Homemade Bagels

      Home Made Bagels


      Yields 12

      6 1/2 cups of bread flour

      1 tsp. active dry yeast

      2 tsp. kosher salt

      2 cups warm water

      1 tbsp. dark corn syrup


      10 cups water

      1/2 cup sugar


      Method of Preparation:


      1. Using an electric mixer, combine the flour, yeast and salt and slowly mix until blended.
      2. Add the syrup and the water and slowly mix until incorporated and let mix for 5-6 min to form dough.
      3. Turn the dough to a floured board and knead by hand adding a little flour if needed. The dough shouldn't be sticky.
      4. Divide the dough in into 12 round shapes, place on a floured board and cover with plastic wrap.
      5. Let proof for only about 30-40 min in a warm place.
      6. Now place a pan on the stove add the water and sugar and bring to a boil.
      7. Using your index finger poke a hole in the center of the dough and gently shape the dough like a bagel. Quickly drop the dough into the boiling water for 30 seconds only.
      8. Remove the dough to a oil sprayed sheet pan and if you want, sprinkle with either sea salt, dried onions, sesame seeds.
      9. Bake in a preheated 450 oven for 6 min, turn the pan around and let finish cooking for an additional 6-7 min or until well browned.
