Sunday Brunch: Sausage and Cheese Scones

Sausage and Cheese Scones Makes 12 1 pound roll of breakfast sausage 3 1/4 cups of all-purpose flour 1/2 cup sugar 2 1/2 tsp. baking powder 1 1/2 sticks of chilled butter chopped into pieces 1 1/2 cups of shredded cheese any type will work. 3/4 cup butter milk Method of preparation: 1.{}{}{}{} In a skilled cook the sausage breaking it up until there is no more pink left, tilt the pan so the fat drains off and discard. 2.{}{}{}{} In a large bowl, combine the flour, sugar baking powder and cold butter. Using your fingers break up the butter and rub it into the flour until the mixture resembles a course meal. 3.{}{}{}{} Stir in the drained sausage, cheese and butter milk and using 2 forks gently fold the mixture together not forcing the mixture roughly because a scone is supposed to be flaky. 4.{}{}{}{} Empty the mixture in a floured surface and shape into a round about 3/4 inch thick. Let rest for 30 min. 5.{}{}{}{} Cut the dough in half and slice it just like a pie you should make 6 out of each piece. 6.{}{}{}{} Place on a oiled sheet pan and keep them about 1-1/2 inches apart. 7.{}{}{}{} Bake in a preheated 400 degree oven for 15 min. 8.{}{}{}{} Let cool and serve. Note: An optional sprinkle of sugar on top will make the scone have a sweet savory taste. Butter milk, if you don't have a use for unused butter milk, just use 1 tbsp of lemon juice for each cup of milk, let sit for 30 min and it will give you excellent results.
