Makes 12 Pancakes
1/2 cup pepperoni chopped
1/2 cup tomato chopped
1/2 cup green pepper chopped
1/2 cup chopped fresh mozzarella cheese
1 tsp. chopped fresh thyme
1 tsp. chopped fresh parsley
2 cups of Bisquick or Pancake mix dry
1 cup milk
1 cup tomato sauce
1/4 cup grated parmesan cheese
Method of preparation:
1 in a bowl, combine the pepperoni,tomato,pepper,mozzarella cheese,thyme and parsley. Mix well and refrigerate.
2. In another bowl, combine the pancake mix, milk and eggs. Mix gently do not over mix just enough to combine.
3. Gently fold in the pancake mix into the pepperoni mix and fold in gently. Let rest for about 15 min.
4. Set a nonstick pan to medium heat and using a pan spray make 4-5 pancakes at a time and place in a warm oven until complete.
Serve with a drizzle of tomato sauce and sprinkling of cheese.
