      Sunday Brunch: Super Bowl Breakfast Nachos

      Breakfast Nachos


      Serves 4


      1 bag of tortilla chips

      Chopped cilantro

      1 cup fresh salsa


      Avocado Cream:

      1 bunch cilantro

      2 avocados

      1 jalapeno pepper chopped

      1/4 cup mayonnaise

      1/4 cup sour cream

      1/2 tsp. ground cumin

      1/2 tsp. black pepper

      1 tsp. salt

      1/2 cup cream cheese


      For the toppings:

      1 pound breakfast sausage casing removed and cooked

      1 green pepper cut into thin slices

      1 red pepper sliced into thin slices

      2 jalapeno peppers sliced thin

      2 tbsp. olive oil

      6 eggs beaten

      1 cup Manchego Cheese shredded


      Method of preparation:

      1. For the avocado cream, place all of the ingredients in a food processor and puree until smooth and creamy. Set aside
      2. For the toppings, have the cooked sausage in a bowl, heat 1 tbsp. of the olive oil and saut the peppers until glossy about 2-3 min. Set aside
      3. To the hot pan, add the other tbsp.. of olive oil and heat until hot and add the beaten eggs and mix quickly until creamy and not over cooked. Quickly remove from the heat and sprinkle the cheese in and mix.
      4. For plating, place the tortilla chips in a large platter, Top with the sausage, then add the egg and cheese mixture, then the peppers, garnish with the salsa and cilantro. Serve quick.
