      Sunday Brunch: Watermelon Gazpacho

      Watermelon Gazpacho

      Serves 4-6

      6 cups of peeled watermelon

      1 cup finely diced watermelon diced 1/8"

      1/4 cup cranberry juice

      1 cup cucumber peeled and diced 1/8"

      1 cup diced celery 1/8"

      1/2 sweet red or green pepper diced 1/8"

      2 tbsp. red onion diced 1/8"

      3 tbsp. chopped fresh mint

      {}1 tbsp. chopped fresh parsley

      2 tbsp. fresh lime juice

      1 tbsp. good quality vinegar

      1/2 jalapeno pepper chopped 1/8"

      Method of preparation:

      {}

      1. Chill a few Martini Glasses or similar
      2. In a food processor, puree the 6 cups of the watermelon until smooth.
      3. Place the mixture into a large bowl and whisk in the remaining ingredients and let chill for 3-4 hours.
      4. At serving, fill the glasses with the chilled Gazpacho and serve with chilled spoons.
