      Sweet and Tangy Melon Slaw

      Serves 8

      Ingredients:

      4 tablespoons shallot, minced

      4 tablespoons mint, chopped

      1/4 cup cider vinegar

      2 tablespoons honey

      1 teaspoon salt

      1 Asian pear, julienne

      1/2 cucumber, julienne

      1 jicama, julienne

      1 cup watermelon, cubed

      Method of Preparation:

      1.Combine shallot, mint, vinegar, honey, and a pinch of salt.

      2.In a separate bowl, combine pear, cucumber, jicama, and watermelon. Pour dressing over fruit mixture. Let sit 20 minutes before serving.
