      Turkey Pineapple Packets

      Serves 4


      1 8-ounce can pineapple slices in juice, liquid reserved

      2 tablespoons soy sauce

      2 tablespoons honey

      2 tablespoons apple cider vinegar

      1 cup cooked brown rice

      1 red bell pepper, sliced

      1 green bell pepper, sliced

      1 pound boneless turkey breast, sliced

      Method of Preparation:

      1.Combine pineapple juice, soy sauce, honey, and vinegar in a small bowl. Whisk to combine.

      2.In a large piece of foil, add rice, several slices of red and green bell pepper, pineapple slices, and turkey slices. Drizzle with 3 tablespoons liquid. Fold foil into packets, making sure to pinch edges tightly so no juice can escape. Repeat with remaining three pieces of foil.

      3.Heat grill. Cook for 20-25 minutes or until turkey is no longer pink, rearranging occasionally.
