      Zuppa Di Fagioli

      Serves 8

      Ingredients:

      1 pound Borloti dried beans

      4 cups chicken stock

      1 onion, chopped

      2 cloves garlic

      1 sprig rosemary

      salt and freshly ground black pepper to taste

      1/4 cup extra virgin olive oil, divided

      1 loaf stale bread, diced

      Method of Preparation:

      1.Soak beans overnight in 8 cups of cold water. Drain beans, add to a saucepan with chicken stock, onion, garlic , rosemary, salt and pepper. Simmer over low heat for an hour before adding 2 tablespoons extra virgin olive oil. When the beans are cooked, pour in a bowl in which you have diced bread. Season with the remaining olive oil and coarsely ground black pepper.
