Healthy Tips for Diabetics: Chicken yakisoba
Yield: 6 servings
1/2 teaspoon sesame oil
1 tablespoon canola oil
2 tablespoons chile paste
2 cloves garlic, chopped
4 skinless, boneless chicken breasts, cut into 1-inch cubes
1/2 cup soy sauce, divided in half
1 onion, julienned
1/2 medium head cabbage, coarsely chopped
2 carrots, coarsely chopped
2 cups soba noodles, cooked and drained
Method of Preparation:
1. In a large skillet over high heat, combine sesame oil, canola oil and chili paste; cook for 30-seconds. Add garlic and cook an additional 30 seconds. Add chicken and a quarter cup of soy sauce. Stir fry until chicken is no longer pink, about five minutes. Remove mixture from pan, set aside, and keep warm.
2. Using the same pan, combine the onion, cabbage, and carrots. Stir-fry until cabbage begins to wilt, 2-3 minutes. Add remaining soy sauce, cooked noodles, and the chicken mixture to pan. Stir to combine and serve.
