Student Club Week: Homemade pretzels
Yield: 36 pretzels
3 1/4 cups water
1 1/2 tablespoons or 2 envelopes instant yeast
5 3/4 cups bread flour
1 tablespoon salt
1 tablespoon plus 1 teaspoon malt powder
1/4 cup unsalted butter
Method of Preparation
1. Preheat oven to 380 degrees.
2. Combine water, yeast, flour, salt, malt powder and butter in mixer with dough hook. Mix at the lowest speed for four minutes. Mix at the second speed for three minutes.
3. Divide dough in half. Cover and let rest 10-15 minutes.
4. Divide dough into portions the size of about a baseball. Form into pretzels and place on parchment-lined sheet pans. Sprinkle with salt.
5. Bake until browned.
ABOUT JWU's PEACE LOVE AND BREAD STUDENT CLUB
The movement of bringing students, faculty, alumni and friends of JWU together to hone their bread skills and serve the community. The club meets once or twice every month of the academic year on Saturdays (and some Fridays) to bake bread, make breakfast, and practice bread skills. Bakes begin at 7 a.m. and typically end around 2 p.m. Members participate in mixing, shaping, and baking all of the bread. At the end of each bake, the club donates the bread to local organizations, shelters and food banks.
