Sunday Brunch: Spring Breakfast Skillet
Spring Country Breakfast
3/4 lb bacon (about 12 slices) chopped
1/1/2 cups diced red potatoes
1 red pepper chopped
1 tbsp. old bay seasoning
1/2 cup shredded cheddar cheese
2 tbsp. Fresh parsley
Salt and pepper to taste
1. Cut bacon into 1-inch pieces and place in skillet over medium heat. Cook for 5-7 minutes stirring often, until bacon is crisp
Carefully drain off about ½ the fat and return to stovetop.
2. Add potatoes and peppers, and old bay to the skillet and cook for about 8-10 minutes until the potatoes are golden brown. Add the parsley Add the bacon back to the pan.
3. Crack 4 eggs on top of the mixture and place in a hot oven for 6-8 min or until the eggs are just set.
4. Sprinkle the cheese on top and place back I to the oven for 1 min. Serve at once.
Chef’s note : This is a perfect dish for using a cast iron pan, Bring it to the table on a pad and serve it from the pan it will keep the food hot for 20-30 min.
