Bonkers with Bacon: Monster BLT

Yield: 4 servings


For bacon

1 1/4 pounds bacon, sliced thick

2 small loafs of ciabatta bread cut into 4 pieces lengthwise

For the oven roasted tomatoes

4 large ripe tomatoes, sliced ½ inch thick

1/4 cup olive oil

1 clove garlic, minced

1/2 teaspoon dried oregano

Salt and pepper to taste

For the roasted radicchio

1 head of radicchio cut into quarters

2 tablespoons olive oil

Salt and pepper to taste

For black truffle mayonnaise

1 tablespoon black truffle oil

1 cup mayonnaise

1 tablespoon basil, minced

1 teaspoon course cracked black pepper

Method of Preparation

For the bacon

1. Preheat oven to 350 degrees, when preheated put bacon in and cook until crisp about 10 minutes.

2. Remove and let cool

For the tomatoes

1. Preheat oven to 450 degrees.

2. Lay the tomatoes on a sheet pan, drizzle with the olive oil, garlic, and oregano.

3. Place in oven for 3-4 minutes, until just starting to shrivel, then remove from oven and chill right away.

For the roasted radicchio

1. Drizzle the radicchio with olive oil and salt and pepper, place in the same hot 450 degree oven for five minutes until starting to char. Cool.

For the black truffle mayonnaise

1. In a medium bowl whisk the truffle oil, mayonnaise, basil and the cracked pepper, mix well.

2. Set aside

To assemble

1. Place one tablespoon of the mayonnaise on each top and bottom of the ciabatta bread.

2. Add the radicchio on top of the mayonnaise, divide the bacon, then the tomatoes, then the top of the ciabatta.

3. Hold together with a pic and serve.
