Cooking with Grains: Bulgur with fruit and pistachios

Yield: 4-6 servings

Ingredients

1 cup uncooked bulgur

1 cup boiling water

1 1/2 cups thinly sliced nectarines (or fruit of choice)

1/2 cup green onions, thinly sliced

1/4 cup fresh flat-leaf parsley, chopped

1 tablespoon fresh dill, chopped

3 tablespoons extra-virgin olive oil

3 tablespoons white balsamic vinegar

3/4 teaspoon salt

3 tablespoons chopped pistachios ¼ teaspoon freshly ground black pepper

Method of Preparation

1. Combine the bulgur wheat with the cup of water in a bowl and allow stand for one hour. After the hour mark, pour off any excess water. Using a fork, gently fluff the bulgur.

2. Place the fruit, onions, parsley, and dill into the bowl.

3. In a small bowl, whisk together the olive oil and vinegar and pour over salad.

4. Toss lightly and garnish with pistachios.

5. Add pepper as needed.
