Glorious Garlic: Garlic steamed clams

Yield: 2 servings


2 tablespoons olive oil

8 garlic cloves, chopped

2 small shallots, minced

1 cup dry white wine

1/2 cup clam juice

3 tablespoons unsalted butter

2 tablespoons minced thyme

Kosher salt and freshly ground black pepper, to taste

2 pounds Manila or littleneck clams or mussels, scrubbed

2 tablespoons minced parsley

Crusty bread, for serving (optional)

Method of Preparation

1. Heat oil in a large saucepan over medium heat. Cook garlic and shallots until golden brown, about 8–10 minutes.

2. Add wine, clam juice, butter, thyme, salt and pepper. Bring to a boil. Add clams and cook, covered, until shells open, 3–4 minutes. Stir in parsley and serve with bread.
