Tuesday's Child Tina-Marie whips up breakfast at Modern Diner
Inside the Modern Diner in Pawtucket, the award-winning custard French toast is sizzling on the grill.
The scrumptious favorite was born out of a miscalculation: too much pudding being made one night.
Owner Nick Demou decided to serve it for breakfast.
"It's an accidental hit. I got lucky," Demou said. "That's it."
And with a soft spot in his heart for foster children -- as pictures on the wall of the diner prove -- Demou agrees to open up his kitchen to Tina-Marie, our Tuesday's Child.
Texas toast is dipped in the egg batter and tossed onto the grill. Vanilla pudding with a bit of brandy goes on the plate first, and then layers of toast, fruit, powdered sugar and sweet pecans.
Tina-Marie works hard to please. That's one reason she'd make a nice addition to family who is patient and understanding.
Cook Vic Claudio gives Tina-Marie lots of encouragement, and she thrives on it.
"First time out she did a great job. She's got promise. She's got promise," Demou says.
